Kuchen Dough
Ingredients
3 cups milk - scalded
½ c (1 stick) butter
1 c + 1 t sugar
1 t salt
4 eggs
1 cup warm water
3 pkgs yeast
1 t sugar
Directions

In a large sauce pan, scald the milk.

Remove from heat and add butter, stir until melted.

Allow to cool for 15-20 minutes.

Mix in 1 c sugar, 1 t salt and eggs until combined.

In a separate container (remember, this will “grow”), mix together yeast, warm water, and 1 t sugar.

Allow yeast to proof for a few minutes.

Combine the milk and yeast.

Add flour to make a soft dough (10-11 cups usually).

Place the dough in a warm place (room temperature or a little warmer) and allow to rise to double in size.

Punch down and allow to rise again to double in size.

Punch down and use.
