Kuchen Dough

Ingredients

  • 3 cups milk - scalded
  • ½ c (1 stick) butter
  • 1 c + 1 t sugar
  • 1 t salt
  • 4 eggs
  • 1 cup warm water
  • 3 pkgs yeast
  • 1 t sugar
  • Directions

    1. In a large sauce pan, scald the milk.
    2. Remove from heat and add butter, stir until melted.
    3. Allow to cool for 15-20 minutes.
    4. Mix in 1 c sugar, 1 t salt and eggs until combined.
    5. In a separate container (remember, this will “grow”), mix together yeast, warm water, and 1 t sugar.
    6. Allow yeast to proof for a few minutes.
    7. Combine the milk and yeast.
    8. Add flour to make a soft dough (10-11 cups usually).
    9. Place the dough in a warm place (room temperature or a little warmer) and allow to rise to double in size.
    10. Punch down and allow to rise again to double in size.
    11. Punch down and use.
